DAHLIA WITHE 2015 – DO PENEDES

Grape Variety

Viognier /

Vineyard: Can Romeu (600 m altitude).

Year planted 2004. Growing system: Cordon de Royat.

Soil: deep, stony and cool soil.

Can Romeu is the highest vineyard of our property; situated at 600m above sea level in the Font-Rubí mountain range from there we can contemplate the landscape of the entire Penedés region, which has remained virtually unaltered over the centuries.

Xarel·lo /

Vineyard: Can Llerda.

Year planted 1956. Growing system: traditional (bush-vine).

Soil: natural-clayey, deep and cool.

Climate

Warm climate under the influence of the prelittoral Mediterranean mountain range: cold winters and hot summers (important contrast between low and high temperatures). Rainfall average between 500-600 l/m².

Farming

Viognier /

Destemming, (elimination of the grape stalks or stems before devatting the grapes). Maceration with the skins, cooling the grapes to a temperature of 8ºC. Subsequent separation of the must (devatting and clearing) and slow fermentation at 13ºC.

Xarel·lo /

Destemming, maceration with the skins, cooling the grapes to 8ºC. Subsequent devatting and slow fermentation at 13ºC. Part of the must was fermented in fine-grained French oak barrels (300l) (3/4 months).

Tasting note

Intense and elegant deep aromas, rich in nuances, mineral touches of sun-dried pitted apricots and other pit fruits (peach, medlar). Mouth filling, light and pleasant tropical hints, long aftertaste and beautifully balanced.

Salads with fresh cheese, prawns.

Spicy seafood, crab, sautéed garlic prawns.

Fish soups and bisques.

Grilled salmon.

Fish paella and rice dishes with fishes.

Turkey breast, curried chicken.
