Anais Xarel·lo DOP Penedès
Vineyard: Can Llerda. Organically certified (CCPAE).
Year planted 1956. Growing system: traditional (bush-vine). Soil: natural-clayey, deep and cool.
Warm climate under the influence of the prelittoral Mediterranean mountain range: cold winters and hot summers (important contrast of the low and high temperatures). Rainfall average between 500-600 l/m2.
Destemming. Juice maceration with its skins, cooling the grapes to 8oC. The free-run juice is slowly fermented in stainless steel tanks at 17oC to keep the typical aromas of this variety. Subsequently 3 months of batonnage to achieve greater complexity and creaminess.
Complex aromas of pit fruits (peach, apricot, medlar) and exotic fruits (mango, passion fruit). It is perceived a mineral hint that gives to our wine an especial personality.
Seafood: raw, grilled or preserved in brine or oil.
Salads: fresh cheese, seafood, or lukewarm of king prawns. Fish and seafood soups, creams and bisques.
White and blue fish.
